A Blend of Science and Art

Organically grown, our olive oil is the essence of Slow Food: delicious food created with care, grown and harvested with methods that have a positive impact on our land and ecosystems. Every step of our production is slow and deliberate. We always do what is best for the fruit; it’s about quality, never quantity.

We harvest veraison olives that are in the early stages of ripening. Although these olives yield less oil than ripe ones, they have the quality of possessing an incredibly high concentration of polyphenols along with very low acidity.

To capture and preserve the freshness of our Novello and DOP Reserva, and to minimize oxidation, we vacuum seal with nitrogen gas the oil into stainless steel bottles.

For us, we embrace this attention to detail as part of our pursuit of crafting the perfect olive oil.

We bottle the oil in 18/10 stainless steel bottles inspired by the ideas of the late Marco Mugelli, the founder of National Association of Professional Olive Oil Tasters (ONAPOO). Stainless steel is the best material for preserving olive oil's nutritional and flavor characteristics.

Each Olive tree is hand pruned early in the spring.

The fruit is hand harvested in the fall, and we often go through the groves more than once to select the finest fruit at the prefect time.

The oil is milled and carefully blended in small batches.


Olio Novello

Olio Novello is made from the oil of the first olive harvest in October. These olives are slightly greener than the main harvest, and the oil is bottled immediately, unfiltered. The result is a bright green oil, spicy with notes of green grass and the flavor of fresh olives.

“Novello” means “new” and until recently, Novello was available only to olive millers and their families, who would enjoy it in the days following the harvest, while the commercial oil was settling. This premium fresh oil is best enjoyed drizzled over roasted meats and fish, soups and salads, bruschetta and grilled vegetables.

Olio Reserva

Our single-estate Olio Reserva is our certified-organic extra virgin olive oil blend. The olives are harvested by hand, and within four hours they are made into oil. After racking (the natural settling and clearing process), we blend the olive oil varieties to our estate’s signature taste profile within DOP Umbria Colli Orvietani standards.

The result is a golden green oil, robust and full-bodied and clearly from central Italy.

As with all our oils, Domenica Fiore Reserva is nitrogen sealed in stainless steel bottles to preserve the oil’s freshness and quality, and each specially designed bottle is signed and numbered by Cesare Bianchini, our direttore, for traceability.

Olio Monaco

Olio Monaco is our award-winning organic extra virgin olive oil that is produced exclusively from a single variety of Canino olives, often referred to as Olivella because of the small size of the fruit. The olives are hand harvested and pressed within four hours of picking.

This exquisite oil, with aromas of green fruit and notes of herbs, has exceptional harmony and persistence. Meticulous packaging in a nitrogen-sealed 18/10 stainless steel bottle preserves the oil’s freshness and integrity.

Olio Veritas

Olio Veritasis a fruity medium-intensity organic extra virgin olive oil produced from Leccino and Frantoio olives.

Olives are hand harvested in early October, when high in polyphenols and antioxideants, and cold pressed within four hours. Packaged in a nitrogen sealed 18/10 stainless steel bottle, each bottle is hand signed, dated and numbered by our producer.

Traceable from Tree to Bottle

Each bottle of our Olio Novello and Olio Reserva is numbered and dated (authenticated by Cesare Bianchini, our direttore), and can be traced so you will always know when the olives in your oil were harvested (the day or week), where they were harvested (the specific orchard) as well as when they were milled, blended and bottled. Additional characteristics of the oil include polyphenol and FFA (Free Fatty Acids) counts and the peroxide value of your oil at the time of bottling.

Furthermore, our Olio Novello and Olio Reserva is assessed by the sensory panel from Orvieto and certified organic in Italy by Certifie Biologique par: QCertificazioni S.r.l. and Canada’s National Standards for Organic Agriculture. In addition to these two organic certifications, the Olio Reserva is certified Denominazione di Origine Protetta (DOP) Umbria Colli Orvietani.
