This olive oil shows a regulator-mandated expiry date of April 2023. Thanks to our nitrogen-sealing bottling technology and our 18/10 grade stainless steel bottles, this olive oil is still well within freshness. We will still be enjoying Novello 2020 beyond the Spring, and we’re confident you will too. If you are in any way unsatisfied with this purchase, we will refund it full.
Made from the first olive harvest in October, Novello has notes of fresh-cut grass, chicory, tomato leaves and cardoon. This unfiltered oil has a spicy, herbaceous green-apple finish. Use Novello for making vinaigrettes and dipping bread.

Historically, the new, or novello, oil from the first olive harvest was only available to olive millers, who would savor it while the commercial oil was settling. Even today it is rare to find novello oil outside the country of origin because it is characterized by its extreme freshness. Because Domenica Fiore’s first batch of olives of the season is pressed within four hours and then immediately packaged and dispatched, you can enjoy the bright, unfiltered flavor of this unique oil.
