Novello di Notte 2022

Novello di Notte is a small batch press of Leccino and Frantoio estate olives collected before the regular harvest season begins. The result is an extremely limited supply of fresh green and intensely flavored super premium fresh oil that is exceptionally high in polyphenols and antioxidants. This special early harvest happens in late September under the nighttime cover of cool starry skies, when the temperatures are optimal for picking and pressing. The complete darkness shields the olives from sunlight and oxidation, creating the most pristine extra virgin novello olive oil the world has ever seen.
