Novello di Notte

Novello di Notte is harvested in late September when the fruit is still green and polyphenol and antioxidant levels are very high. The fruit is protected from the heat by harvesting at night, under the cool cover of dark, starry skies. This unique, small‑batch super-premium oil is a blend of Frantoio and Leccino olives. When first off the mill, it pours a deep emerald color and exudes intensity—bold and fresh, with flavor notes of artichoke and cut grass. Bring it to the table and enjoy with fresh bread, drizzled over roasted vegetables, rich legume soups, or stirred into dark chocolate desserts to allow its intensity to shine through.

Novello

Novello is an early-season oil that blends Leccino, Frantoio, and Moraiolo olives harvested in early October. This unfiltered oil is bright green with flavor and aroma notes of fresh‑cut grass, herbs, chicory, and tomato leaf. Hand-pressed and bottled immediately in nitrogen-sealed tanks to lock in freshness, it delivers an herbaceous, fruity punch and a crisp, green-apple finish. Drizzle it over bread or in a vinaigrette over fresh garden salads to awaken the senses with its vibrant vitality.

Reserva

Blended from traditional Umbrian varietals—Frantoio, Leccino, Canino, and Moraiolo—Reserva rests for two months to develop its classic flavor profile. Nitrogen-sealed in stainless steel tanks to preserve freshness, this oil offers a balanced harmony of almond, tomato, cooked fennel, and artichoke leaf flavor notes.
